The email address linked to your account is used to identify you as a user and therefore cannot be changed. If you want to switch to a different email address, you need to contact the person responsible for the place where you use Parakey and ask them to send a new invitation to your desired email address. A new account will then be created, and you will receive an email with your new login details.
